Red Cabbage


Ingredients:

  • 750 g red cabbage
  • 1-2 apples
  • 1 teaspoon caraway
  • salt and pepper
  • juice of one lemon
  • 80 g dripping
  • 20 g sugar
  • 1 onion
  • a dash of vinegar
  • 125 ml red wine

Preparation:
Cut the cabbage in fine slices, cut up the apple, mix in well the caraway, salt, pepper and lemon juice, press down well and cover, and allow to marinate for at least two hours.

Caramelise the sugar in the hot dripping, then cook the onion, which has been sliced into noodle shapes, until golden yellow and sprinkle on the dash of vinegar.

Add the marinated cabbage, add a little water and steam briskly. Finally add the red wine and steam till ready.
