Lentils with Bacon


Ingredients:

  • 200 g dried lentils
  • 1 bouquet garni
  • thyme
  • 1 small bay leaf
  • 1 onion studded with cloves
  • lentil stock
  • 1 tbsp oil, 1 tbsp flour
  • salt, pepper
  • vinegar or lemon juice
  • 100 g smoked or unsmoked bacon

Flavouring for the lentils:

  • 1 onion
  • 1 clove garlic
  • thyme
  • parsley

Preparation:
Cook the lentils with the bouquet garni, thyme, bay leaf and the clove-studded onion until soft ( without salt, so that they soften more quickly ). Mix together the oil and flour. Briefly roast the finely-chopped lentil herbs, deglaze with vinegar or lemon juice, add the lentil stock, cook till smooth, and thoroughly cook through once more. Season with a little vinegar, salt and pepper.

Finally sprinkle the finely-chopped smoked or unsmoked bacon over the lentils and serve.
