Hot Spelt-pot Dumplings in Cold Riesling-soup


Ingredients:

  • ¼ kg (Organic) Cream Cheese (or quark) 40%
  • 1 Egg
  • 3 Table spoons freshly ground Spelt
  • A dash of Ocean-salt

Preparation:
Mix the cream cheese, egg, and spelt-flour. Place 8 dumplings into lightly salted boiling water. Steep for 15 minutes. Place dumplings on a soup plate, pour “Riesling-soup” on the plate, and decorate with whipped cream, green walnuts, lemon balm, and Borretsch-blossoms.

TIP: The best taste for the soup can be achieved by using an older Riesling Smaragd with a light sweetness..
